Lead Cook - YMCA of the Ozarks (Food Services)
Assist Director level staff in food ordering, receiving, and menu implantation.Assist Director level staff in the structure, tasks, and schedule for a Back of the House training program.To assist Director Level staff with supervising, and managing shift personnel.Full time lead cooks operate on a rotating basis, performing tasks that will include all aspects of cooking and prep work, including preparation of snacks for catering events, Special dinner, banquets, and requests for catering events, Lead cooks must be able to cook on any line in the kitchen.Must wear approved uniforms; hairnets or hats; nametags; and follow prescribed health and hygiene codes as prescribed by the Food Service Director and wear clean apron when on serving line.To maintain an efficient and sanitary work environment in aligns with Missouri Department of Health guidelines.To provide timely and attractive meals that are consistent in quality, flavor profile, presentation and temperatures, according to the recipe. Maintain temperatures by checking the buffet line throughout the shift.To read, follow and understand standardized recipes. Submit and provide feedback, suggestions, and procedures that may enhance the overall presentation of current recipes.Must complete daily and weekly cleaning checklist by completion of each shift.Must work with speed and accuracy in order to complete all assigned tasks within the scheduled workday. Full time lead cooks must take ownership of the kitchens cleanliness.Must be able to cook to the numbers so they are no overages or shortages to help maintain food cost. Keep leftovers to a minimum.To know allergies and be able to communicate with the guest and make sure their food is safe.Performs all other duties as assigned.
